Steamed Lamb (Qingzheng Yanggaorou) 清蒸羊羔肉

This dish is characteristic of the region, and is very tender and flavorful. Steamed with ginger, shallots, garlic and chili for 30 minutes, is served with vinegar, garlic sauce and salt.

Hand-grasped mutton (Shouzhua Yangrou) 手抓羊肉
This is a traditional local food in Ningxia. Favored by the Uygur people, it is a dish traditionally eaten by hand, though nowadays people tend to use utensils.

Sweet and Sour Yellow River carp (Tangcu Huanghe Liyu) 糖醋黄河鲤鱼
To prepare this dish well, the chef has to be very adept with the knife, as unless the carp is sliced in just the right way, it will not fry properly after seasoning. When done right, this dish has a fantastic texture, both crunchy and soft, and a great contrasting set of flavors.

Zhongwei Pigeon Fish (Zhongwei Gezi Yu) 中卫鸽子鱼
This local fish is a favorite when steamed, with a tender bite and fresh flavor. So called because of its resemblance to the bird.

Jinqian Star Jelly (Jinqian Facai) 金钱发菜
Star jelly is a popular steamed dish at banquets and gatherings. It is usually served with shredded chicken, chopped egg and medlar fruit on top.
