Yangrou Paomo 羊肉泡馍
Yangrou Paomo is one of Xi’an’s can’t-miss dishes. After ordering yangrou paomo, diners are presented with several slices of wheat-flour flat bread, which they then must break into ever-smaller fragments. When the customer has smashed up the bread to his own satisfaction, he returns the pieces to the waitress, who will take them back to the kitchen where a mutton stock with noodles and vegetables is poured on top. The dish is sometimes accompanied by cloves of pickled garlic.
