Rubing (fried goat cheese) 乳饼

This healthy bite of dairy is made from fresh goat milk, and is eaten plain or steamed with high-quality xuanhua ham.

Fermented tofu is first cut into slices or patties, then baked, fried or roasted. Seasoned with hot chili and wild pepper oil, these fiery, sour munchies are oddly satisfying, and are extra delicious when paired with rice.

Dajiujia 大救驾
Hearty Dajiujia is a delightful conglomeration of rice chunks, ham, egg, tomato, peppers and other ingredients. Dajiujia is particularly famous in Tengchong County, where a local legend explains the origin of this treat’s odd name. According to the story, exiled Ming Dynasty Emperor Zhu Youlang, while fleeing persecutors, stumbled into Tengchong hungry, tired, and dispirited. The villagers offered him a meal of this (then presumably nameless) snack, which he gratefully accepted. After only a few bites, the former emperor felt renewed, revived and uplifted, and stated aloud that it had saved his life. From that day forth, the snack was named “Da Jiu Jia”, or “Saving the Emperor’s Life”.
