Mushroom Chicken Soup 小鸡炖蘑菇

Mushroom chicken soup is one of the four great stewed dishes of northeast China. Chicken morsels are cooked in chicken broth with scallions, ginger and other seasonings. Honey mushrooms (Armillaria Mellea) are added once the soup comes to a full boil and lend it its unique flavor. The stewed mushrooms are soft and tender, and the chicken morsels delicate and delicious.
