Lipu taro pork 荔浦芋扣肉

Lipu taro pork is made from pork, Lipu taro, Guilin preserved bean curd, and various other ingredients. Pork and taro cubes are fried separately and then steamed together, so that each piece is golden on the outside and soft, juicy and flavorful on the inside. The dish is said to dispel "fire" (inflammation) in the body and improve one’s complexion.

Stewed duck with gingko 白果炖老鸭
Gingko, cubed duck meat, ham slices, and other ingredients are steamed together. The resulting dish is a light but savory soup in which the tender duck meat contrasts pleasantly with the smooth, slightly slimy texture of the gingko.

Stewed clams and chicken 蛤蚧炖全鸡
Chicken, clams, preserved longan, and slices of ham are stewed with other ingredients in a covered porcelain pot for two hours. Traditionally this subtly flavored dish has been said to nourish the pulmonary system, prevent coughs, invigorate one’s kidneys, and strengthen the Yang.

Lo Han boiled chicken, as the name implies, is steamed with traditional Chinese herbs including Lo Han Kuo, Astragalus (milk vetch) and Dang Shen (codonopsis pilosula). This refreshing soup is a great source of anti-oxidants and can help to lower blood pressure.

Duck wrapped in lotus leaf is a delicacy known for its unique fragrance and tenderness. Duck is fried until it is golden brown. A filling made of lean pork, bamboo shoots, ham, taro, mushrooms, green beans, and shrimp is stir-fried in a skillet. The duck is then stuffed, wrapped in a lotus leaf, and steamed. The unique fragrance of the lotus leaf permeates the tender duck meat, making this dish especially delicious.

Prepared by steaming peeled water chestnuts with fresh, lean pork, and various condiments. Its crispy and delicious taste is a good choice all year long. This dish is said to help prevent dehydration, improve digestion and replenish one’s ‘Chi’.

Yangshuo Beer Fish 啤酒漓江鱼
A renowned specialty of Yangshuo County. Local Li River fish are cooked with fresh-brewed Li River beer, tomatoes, garlic leaves and ginger slices. The best place to sample it is at the beer fish stalls of the night market in Yangshuo.

Roasted Sucking Pig (Piglet) 烤乳猪
Suckling pigs are rice-fed, which gives the meat and skin a delicate color and flavor. They’re roasted using methods that make the skin appear lustrous and lightly golden. In Guilin slices of roast suckling pig are sprinkled with shallots, soy sauce and sugar. 

Fried Beef with Winter Bamboo Shoots 冬笋炒牛肉
A delicately sautéed home-style dish consisting of locally-grown winter bamboo, prime beef, agaric fungus, shiitake mushrooms, and an assortment of spices. Said to enrich the blood, invigorate the spleen, improve the stomach lining, and nourish one’s yin.
