Fried Stinky Tofu  (Smelly tofu) 油炸臭豆腐

Much like a good slice of limburger cheese, the stench and appearance of Stinky Tofu is quite deceptive.  Crispy on the outside and soft on the inside, this salty snack takes several months to prepare.  Blocks of tofu are first marinated in brine, then pickled with vegetables for some months.  To prepare, the blocks are usually fried and smothered in chili sauce.  Rumor has it that this was one of Chairman Mao’s favorite snacks.  

Sisters' Rice Balls 姊妹团子
These round treats have an outer layer of smooth rice that is stuffed with either meat and vegetables or sweet fillings. The type of filling – salty or sweet – determines whether or not this is a staple food or a desert. On happy occasions, one sweet ball and one salty one are presented side by side to symbolize harmony.

Though similar to the baozi (stuffed buns) that is common throughout the rest of the country, De Yuan buns are usually – and quite uniquely – filled with sugar.
