1) beijingemily
A special mention goes to beijingemily, an American who used to live in Beijing, and documented daily life in China, mainly through the hutongs. She was able to amass over 210,000 followers due to her great images and through writing in both Chinese and English. Sadly she has left China, but her instagramming continues in Atlanta, USA.
