Honeydew Huo Fang (Mizhi Huofang) 蜜汁火方

A steamed sweet dish made with honeydew melon, cherries and Jinhua ham. Coated in sugar crystals and lotus seeds, it is red and delicious.

Fotang Boiled sliced mutton (Fotang Baiqie Yangrou) 佛堂白切羊肉
The mutton is marinated in its blood and seasoned, it is cooked and air cured. The fragrant meat is best enjoyed dipped in a simple mixture of soy sauce, ginger and shallots.

Shangxi Cow Series (Shangxi Niuza) 上溪牛杂(牛系列)
This series of dishes is made using the liver, tongue, intestine and other parts of the cow, and is a favorite of locals. Each dish is prepared in a different way, using a variety of cooking methods.

Jinhua Dish in Clay Pot (Jinhua Bao) 金华煲
Legend has it that this dish was created by accident by a Jinhua ham maker. The dish is eaten like a hotpot, with different meats and vegetables cooked in it, and then the soup is eaten last. A variety of meats are used to make this dish, including Jinhua ham, duck, turtle and snake.
