Like Beijing Duck or Guangzhou roast pig, this is a dish that is prepared for special occasions. It can be found at country fairs and formal banquets, and it is a favorite of locals and visitors for its mouthwatering aromas and succulent taste.

Lamian Noodles 拉条子
Though popular throughout China, these noodles originated in Xinjiang. They are the ones you’ve probably seen being stretched, pulled and spun at markets and restaurants around the country. Freshly stretched and cooked, lamian are great with soup, or simply stir fried with meat and vegetables.

Naan Bread 囊
Naan bread is a staple food in Xinjiang. Though it shares a name with the Naan of India, the Xinjiang bread is saltier and sometimes molded, as opposed to the hand rolled Indian naan. Xinjiang naan is quite tasty, and is great for soaking up the juices and sauces that abound in the regional cuisine.

Uygur Rice 抓饭
Uygur rice is cooked in a mutton broth with various vegetables, and usually meat. Though there are a wide variety of different ways to prepare it, it is always tasty, rich and filling.

Big Plate Chicken (Da Pan Ji) 大盘鸡
Though a relatively new dish in Xinjiang (first becoming popular in Shawan county in the 1980s), it has rapidly become a local favorite. Chicken is stir fried with potatoes and noodles before being served on a large plate.
