Changshu Beggar’s Chicken 常熟叫化鸡

Sweet Jellied Bean Curd with Sauce 蜜汁豆腐干

Some find this sticky, glunintous sweet an acquired taste. Usually served in small, manageable square or diamond shapes, gooey gaotuan tastes a bit like candied fruit and a bit like non-dairy jellied custard.

Suzhou-style Noodles 苏式面条

Changshu Beggar’s Chicken 常熟叫化鸡
Though the dish might not sound appealing, the antediluvian methods used in the cooking process preserve the meat’s natural juices with tasty results.  A whole chicken is gutted and opened up, stuffed with ham, mushrooms, bamboo shoots and seasonings and finally wrapped in lotus leaf.  This delicious parcel is, in its turn, coated with mud and baked.  When the mud is dry and comes away from the leaves without leaving a residue, the chicken is ready to eat.
