Nanjing Snacks

Though the city of Jinling was long ago renamed "Nanjing", the city's snacks (and its locally brewed beer) have retained the old name, and are often referred to as "Jinling" snacks.

Duck Blood and Sweet Potato Starch Noodle Soup(Yaxue Fensi Tang) 鸭血粉丝汤

With potato-starch noodles and congealed lumps of salty duck’s blood as the two main ingredients, this dish is definitely an acquired taste. Queasy travelers take note: duck’s blood soup is ironically considered a natural treatment for diarrhea and nausea.

Fried Beef Dumplings (Niurou Guotie) 牛肉锅贴
Though fried beef dumplings (wontons) are not necessarily a Nanjing dish, those in the know will swear that Nanjing does them particularly well. Greasy, meaty and noodley, these little treasures can be had at street-side stalls across the city.

Shredded Bean-curd Sheets (Zhu Gan Si) 煮干丝
This delicious, simple cold dish consists of dry tofu cut into thin strips and mixed with various fresh vegetables.

Twice-dressed Tofu (Hui Lu Gan) 回卤干
Tofu is first fried in a terrific amount of oil then boiled in broth. The center of the tofu becomes soft and saturated with the flavors of the stock. Add vegetables – especially bean sprouts – and voila!

Five Fragrance Egg (Wuxiang Jidan) 五香鸡蛋
Whole shelled eggs are slow-simmered in a spiced tincture of anise, ginger, cinnamon and tea leaves. The spices infuse the eggs with a strong, sweet, earthy aftertaste. The next generation in hard-boiling, Five Fragrance Egg is a healthy snack.

Tofu Pudding (Shijin Dou Fu Lao) 什锦豆腐涝
Despite its name, tofu pudding is less like a pudding and more like a jellied soup. Usually served as a breakfast food, any number of ingredients are added including peanuts, broth, or red beans.

Sweet Taro (Tang Yu Miao) 糖芋苗
This purple, potato-like tuber tastes delicious when sweetened and lightly crisped.
