Lanzhou Snacks

While Lanzhou might not have that much to offer in the way of International food or pubs, Lanzhou's snack selection does much to make up for this. Travellers and expatriates enjoy heading out to grab some of the city's many cheap eats, and snack streets are open until the small hours of the morning during the summer months.

Traditional Lanzhou snacks are flour-based, but visitors will also find hearty meats, piles of sweet fruits and fried goodies.

Don't miss Farmer's Alley (Nong Min Xiang), Hezheng Road(He Zheng Lu), Railway New Village Market(Tie Lu Xin Cun Shi Chang), Square West Snack Street(Guang Chang Xi Xiao Chi), Xiguan Shenzi(Xi Guan Shen Zi)and Small West Lake(Xiao Xi Hu) for a vibrant collection of colorful treats.

Lanzhou Beef Noodles 兰州牛肉拉面

The most famous local dish is unquestionably Lanzhou’s delicious beef noodles, which first came into being during the latter years of the Qing Dynasty.  The noodles themselves are stretched by hand in front of you and then boiled. Locals will read into your temperament, gender and even social class depending on your choice of noodle width.  Ladies and aristocrats are said to enjoy thin noodles, while coarse male peasants like to indulge in exceptionally wide noodles.

The broth is clear and savory, and a colorful conglomeration of radishes, coriander, green onions and red peppers are added.  Best of all, Lanzhou beef noodles can be had at snack stalls the city over, and are rarely more than RMB4/bowl.

For just RMB3, you can grab a bowl of one of the best Lanzhou Beef Noodles in town.  Maizilu doesn’t serve much else, though, so if you’re looking to have a variety of dishes, this probably isn’t the place for you.

Niang Pi Zi 酿皮子
This favorite is made by steaming strips of dough and serving them with pungent sauces. 

Hui Dou Zi (Gray Bean) and Tian Pei Zi (Sweet Wine) 灰豆、甜醅
This snack is a must-try for those who want to experience traditional Lanzhou flavor, as it’s specific to the city, and can rarely be found elsewhere.  Sweet red beans are simmered in wine and served hot or cold, depending on the weather.

Oil Fried Rice Noodle 油炒粉
This dish is made with thin rice noodles that are tossed in a wok with garlic, onions and soy sauce.  

Hot Boiled Pear 热冬果
This dish is accredited to the Tang Dynasty minister Wei Zheng, whose mother was stricken with cough.  Despite her illness, Wei’s mother wouldn’t hear of taking her medicine due to its unpleasant taste.  To make it more palatable, the worried Wei ordered his cook to boil her medicine in a bowl of sweet pear juice.  His mother warmed to the drink and was soon well.  Hot Boiled Pear is still used as a traditional cough suppressant today.
