Baihe (Lily) Tao (Peach) 百合桃

Contrary to the impression one might get from its name, this sweet dish contains no peaches.  Instead, a steamed lily is stuffed with sweet bean paste and drizzled with a syrupy sauce.

This meaty plate of nosh is named after Lanzhou’s White Pagoda, whose many-layered tower is recreated on the plate with slices of assorted cold meats, which include pig liver and yellow shrimp.

Traditionally eaten as a snack or desert, Jincheng Babao is made by whittling a melon rind into a bowl, in which is then placed sweet fruits.  The dish is judged not only by its taste, but on the artistry of the carving.

Slices of pork are roasted over charcoal and served with flaky bread.

Jinyu (golden fish) Facai 金鱼发菜
Much like the Baihe Peach, Golden Fish Facai has no fish in it at all, but rather the shape of the fished dish has given rise to the name.  Facai is a species of fungus indigenous to Gansu.  The light “vegetable” is soaked in water and mixed with sesame oil, cooking wine, and sometimes shreds of poultry.  The mixture is finally steamed and served in broth.
