Sweet and Sour Yellow River Carp (Tangcu Huanghe Liyu) 糖醋黄河鲤鱼 

The Yellow River, which flows right by Jinan is the source for much of the city’s fresh seafood. The carp from the river are known for being particularly large, and are called the ‘Dragon’s Gate Carp’. Crispy fried and served with a mouth watering sweet and sour sauce, this dish is a favorite among locals and visitors. It must not be missed, and is a contender for the best sweet and sour fish in China. An interesting habit in Jinan is to make a soup out of the head, left over after the fish has been eaten. It is cooked into a hot and sour soup that is a local favorite.

Nine Turn Pig’s Intestine (Jiuzhuan Dachang) 九转大肠
The meat in this dish is braised in soy sauce until tender, with a fistful of flavorful herbs and spices. It is reminiscent of the famous Taoist ‘Nine turns Elixir of Life’, hence the name of the dish. When properly prepared, its color is reddish, and it is soft and tender with a sweet and sour, slightly medicinal taste. A well-loved local favorite.

Scallion Flavored Sea Cucumber (Congshao Haishen) 葱烧海参
The highlight of Shandong cuisine, this tender dish is made with fermented sea cucumber, scallions and ginger. It is simple but extremely tasty.

Jinan Roasted Duck (Jinan Kaoya) 济南烤鸭
Somewhat different from Peking duck in terms of preparation, the Jinan variety is made from a force fed duck (think foie gras), which allows for a rich flavor. It was first introduced as a specialty dish for the Governor of Shandong, during the Qing Dynasty. It is served with thin pancakes, scallions and tasty hoisin sauce.
There are two good roast duck restaurants in Jinan: Jufengde and Huiquan, both of which have good reputations.

Quick-fried Kidney (Baochao Yaohua) 爆炒腰花
Quick frying is a hallmark of Jinan cuisine, and kidneys are a local favorite. This dish is reddish in color, crispy on the outside, but creamy and tender in the inside.
