Ice Sculpture Dishes Popular in Wuhan Restaurants

This summer season, many restaurants in Wuhan have started providing so-called “ice sculpture dishes”. The chefs are also ice sculptors, and usually make a good living, earning nearly 100,000 RMB a year. The dishes are reported to have originated in Guangzhou and have just started to become popular in Wuhan markets this year. Many first-class restaurants in Wuhan, including Hujin, Liuheyan, and Qintai Shishang have brought in these specialized chefs and have started to include “ice sculpture dishes” on their menus.

According to a local restaurant owner, they prepare large blocks of ice each day in the restaurant freezer. The chef/ice sculptor then spends the day in the walk-in freezer, wrapped in a coat and armed with a chisel, handcarving these ice blocks into attractive dishes.
