Baogong Fish (Bao Gong Yu) 包公鱼

These small shark-like suckerfish that live in the Bao River are cooked in such a way that the bones soften and the flesh becomes tender and delicate.

The favorite dish of Caocao, king of the Wei Kingdom from 220-265 AD, this aromatic dish is very tender and flavorful. It is flavored with cassia, ginger and bamboo shoots.

This fragrant chicken dish is believed to have been served to American guests when the chef was visiting that country. A number of rare ingredients are used in the preparation, including sea cucumber and magnolia slices.

Originating in the Xiao county of Anhui (famous for producing grapes and wine), the fish in this dish is prepared in such a way that it resembles grapes in color, flavor and aroma.

This duck dish is known for its tender and flavorful meat. It was developed in Wuwei county more than two centuries ago.

Fish Stuffed with Mutton (Yu Yao Yang) 鱼咬羊
Legend has it that this dish came about when a shepherd was herding his sheep across a river in a small boat. When one of the rams fell out of the boat, it was eaten by a school of hungry fish, only to be caught by a fisherman, who cooked and ate them. When he discovered how delicious they were, he told everyone her knew. The story spread all over, and local chefs began to recreate this dish when they discovered how tasty it was.

This dish came about then the Emperor paid a surprise visit to the home of one of his ministers, whose wife had to prepare something for dinner at the last moment. A complicated dish to prepare, a number of different ingredients are layered in a pot and simmered with many spices and seasonings. It is a hearty, country-style dish loved by emperors and farmers alike.

Mt. Bagong Tofu (Ba Gong Shan Dou Fu) 八公山豆腐
Anhui was the first location in China to produce tofu, and the best comes from Mt Bagong. It is characterized by a very fine texture and pure white color. It is made with mountain spring water, and the techniques for production have been passed down through family for generations.

Quick fried shrimp (You Bao Xia) 油爆虾
These large river shrimp are tender and flavorful when quick-fried. Only fresh shrimp should be used.

Fuliji Grilled chicken (Fu Li Ji Shao Ji) 符离集烧鸡
This golden delicious chicken dish is based on a similar one from Shandong province, though the technique has been modified and improved upon by chefs in Fuliji. When prepared properly, the meat is tender and fragrant, and falls easily from the bones.
