Taiye Chicken (Taiye Ji) 太爷鸡 
Taiye chicken is named after an ancient county mayor. In late Qing Dynasty, a local mayor invented this dish after his retirement. The cooking method is quite simple. Once boiled, it is smoked with fried black tea leaves and honey. Once cooled down, it is sliced and cut into bite size pieces. Special salt soup with honey and MSG are added.

Zhoushengji
Zhoushenji is a restaurant in Guangzhou with a long history which staked its claim on a dish called Taiyeji. The skin of the chicken is dark brown with bright white meat, and it has a light smoky flavor. It is simply delicious. It’s no wonder the price is so high as lots of people still come to pay tribute to this dish.

Roasted Goose (Shao’e) 烧鹅
Roasted Goose, a traditional barbecued dish, which originated from Roasted Duck, is a famous dish from Guangzhou. This dish is best if made from the Black/Brown Goose from Qingyuan. Once cleaned, the goose is coated with five-spice powder; hot water is poured over it after which it is immediately submerged in cold water. The goose is then coated with sugar and salt and roasted in an open fire. The most famous varieties of roasted goose can be found at Bingsheng Pinwei and Shen Jing Roasted Goose.

Eh-gong Village
Spacious much like a small park. Eh-gong Village is famous for cooking goose with special sauce. Their geese are from Qingyuan, about 70-80 days old.

Bai Yun Sweet and Sour Pork Kidneys (baiyunzhushou)白云猪手
This classic traditional dish of Guangzhou boasts excellent flavor. Cleaned pork kidneys are cut into pieces and boiled thoroughly. Once cooked, they are submerged in Baiyun Spring Water and left to soak for at least a day – thereby removing all the impurities. The next day, they are boiled with some sugar, white vinegar and salt. After boiling, they must cool for several hours before being served. The name Bai yun Sweet and Sour Pork Kidneys comes from it being soaked in spring water by the same name. This dish is sweet and sour, fatty but not greasy, and crispy-skinned. You will never t of this delicious meal.

Sweet Baked Pork with Honey Juice (Mizhichashao) 蜜汁叉烧
This is one of the more traditional dishes and loved because of its crispy sweet flavor. Although the preparation process is not as elongated as other similar dishes. First, the pork is cut in half and then sliced into smaller pieces before being placed on an earthware. After being marinated for 45 minutes, the meat is strung together and placed in a baking pan. While it cooks in the oven it is lathered with juice at regular intervals. Although the cooking process is simple, it’s a very tasty dish. Locals love it for its sweet taste and crispiness.
