The name of this local delicacy does not do justice to its taste. Made from carp, shark or freshwater fish and formed into balls, these soft, spongy snacks provide a savory, hearty meal. Preparation first requires removing the bones from the fish. After combining with flour, salt and other spices, the fish is then beaten into a smooth consistency and made into a wrap for mussels, shrimp or sturgeon. The dish plays such an important role in Fuzhou cuisine that the locals have a saying: “If there are no fish balls, there is no dinner”. Rice Paste with Seafood Soup (Dingbian Hu) 鼎边糊
Ding Bian Hu, or “rice paste stuck to the cooking pot”, is a favorite Fuzhou dish prepared by pouring rice paste around the rim of a hot iron boiler. Once dried, it is added to seafood soup. Locals typically enjoy Ding Bian Hu at breakfast or dinner, but its popularity has made this dish a tasty treat at anytime of the day.

Yan pi, a versatile snack made from meat paste, offers an endless number of variations. It can be cut into strips and eaten, boiled in water to make savory soup, fried with vegetables or mixed with mussels and other seafood. In Fuzhou, Yan pi makes a welcome gift during Chinese New Year.

Spring Roll (Chun Juan) 春卷
Enjoyed the world over, spring rolls are an especially treasured dish in Fuzhou. They are made by first creating a wrap from rice flour dough. The wrap is filled with various combinations of vegetables, meats or seafood. Fried until golden brown, spring rolls are then served with soy sauce, Chinese vinegar or other dipping sauces.

Shaxian Snacks (Shaxian Xiaochi) 沙县小吃
“Shaxian snacks” is a general name for various kinds of snacks that originated from Shaxian County in Fujian Province. Among them are noodles, steamed dumplings, bianrou (a name that Fujian people give to huntun dumplings), taro buns, fish balls, and other special dishes that Shaxian is well-known for. Bianrou has a crispy wrapping, tender meat and a light fragrance of danggui (Chinese angelica, a medicinal herb) in the soup.
