Brief Intro to Hefei Dining

The Hui cuisine of Anhui is known for being one of the only major styles of cooking in China to regularly use wild game. Hui cuisine is characterized by a sweeter flavor than other Chinese styles of cooking, as well as the tendency to use braising as the most popular cooking method (as opposed to deep-frying or stir-frying). Stewing and steaming are two other methods which are used. Fish stuffed with mutton, grape fish and Wuwei smoked duck are some of the favorite dishes of the region. Rice based dishes and tofu from Mt Bagong are also popular. Chefs that specialize in Hui cuisine are known for being more picky than their counterparts in other parts of China when it comes to choosing fresh produce and top quality ingredients.

Many of the ingredients in Hui cuisine come from the surrounding mountain regions, with leopard cat and pangolin (a type of Asian anteater) being favorite meats, and wild mushrooms and bamboo shoots being harvested here as well. Turtle is another favorite ingredient, and one of the oldest and best-known preparations of it is steamed with ham and then drenched with chicken oil. This 'Mati Turtle' , one of the oldest recorded recipes in the region, is served in a thick, white soup, and the meat is tender and flavorful. It, like many of the local dishes is believed to have medicinal properties.

Hefei local snacks include sanhe rice dumplings, which are made from rice flour and fried, sweet sticky rice balls in soup, and mushroom chicken dumplings.
