Buddha Jumps over the Wall ( Fotiao Qiang) 佛跳墙

An elaborate dish prepared with over 20 ingredients. They include shark's fin and jaws, fish maw (air bladder), abalone, dried scallop, squid, sea cucumber, chicken breast meat, duck chops, pork tripe and leg, minced ham, mutton, winter bamboo shoots, mushrooms and much more. All ingredients are seasoned and steamed separately and later placed in a clay jar where pigeon eggs and cooking wine are added. This savory dish fills the room with its aroma once it has simmered and the remaining ingredients have been added Buddha Jumps over the Wall has been a part of Fuzhou cuisine for over 100 years. It got its name from a scholar who composed a poem in praise of its aroma and flavor: "All the neighbors enjoy the pleasant aromas when the dish is served; and even a Buddhist monk, attracted by the smell, will jump over a wall (in search of the dish).

Litchi Pork (Lizhi Rou) 荔枝肉
The litchi fruit is known for its vibrant reddish pink shell, its juicy inside and its sweet flavor. It complements many traditional dishes, including Litchi Pork. The pork of this sweet and sour dish is fried together with refined sugar, fragrant vinegar, onion, garlic and soup. The result is a glossy, reddish colored pork resembling the litchi fruit. Litchi and water chestnuts often garnish this tasty dish.

10 Flavored Drunken Spareribs (Shixiangzui Paigu) 十香醉排骨
Delightfully sweet and sour, Shixiangzui spareribs are crispy on the outside and tender inside. The ribs are marinated in garlic, refined sugar, fragrant vinegar, ketchup, curry sauce, sesame sauce, starch water and orange, and then friend until golden brown. Water chestnut and spring onion rice accompany this dish.

Chicken Soup with Sea Clam (Jitang Xuehua) 鸡汤雪蛤
Chicken soup with sea clams is truly a homegrown dish. The clams come from Changlezhang Harbor in Fuzhou and the chickens are locally grown. The clams are cut into thin pieces and boiled in water and partway through the cooking process, Shaoxing wine is added. The clams are served in a clear chicken soup that is both nutritious and tasty.
