Lanzhou fare offers several dishes that cannot be found anywhere else in China. Lanzhou cuisine is heavily influenced by the Hui ethnic minority group, and is characterized as being spicy and salty. Beef and mutton dishes appear more frequently than those containing pork thanks to Gansu's shared border with Inner Mongolia and the large Muslim population there.
