Introduction

Wuxi's cuisine is characterized by light, sweet flavors that take advantage of the abundant local seafood. Favorites are the fresh shellfish (crab and shrimp), eel and other lake fish that are caught in the area. Fresh vegetables and fruit are particularly succulent in Wuxi and Jiangsu, and are a welcome addition to all meals here. Local favorites are the Wuxi spareribs and roasted duck, as well as the 'Three whites' from Taihu Lake, the silverfish, white shrimp and white si fish, all of which can be easily found in feature dishes at many local restaurants.
