Xinjiang and Uygur local cuisine takes more influence from the Middle East and Turkey than from China. Spicy food is very popular, and there is a heavy reliance on Turkish and Islamic spices. Though conventional Chinese food can be found everywhere, you should really try the local cuisine restaurants. Xinjiang food is unique and delicious, and extremely popular in the rest of China, for good reason! The food is more savory, and because the predominant religion here is Islam, pork is a rare find, unlike in the rest of China. Lamb and mutton are the most common meats, and the popular lamb kebabs (chuan' r) are the most common of the city snacks you can find on the street. For snack heaven, try the May the First Night Market, which is open to one in the morning. Of course, there are plenty of options if you want to try other Chinese cuisine, from the ever-popular Sichuan restaurants to places that serve Cantonese or even Dongbei (northeastern) food.
